Easy Vegan Apple Cinnamon Cake
What's better than a muffin? A whole cake, of course!
With this recipe we convert our famous organic apple cinnamon muffin mix into the perfectly moist apple cinnamon cake. All it needs is a small tweak in the recipe on the box and you have a delicious cake to share with family and friends!
While our mix was organic to begin with, we've gone ahead and made this recipe vegan and free of added sugar as well. So now you can have your cake and eat it too!
Ingredients
- 1 box of European Gourmet Bakery Apple Cinnamon Muffin Mix
- 2 eggs / flax eggs (2 tbsp ground flax seed + 6 tbsp water)
- 2 tablespoons olive oil
- 2/3 cup Tempt Hemp Unsweetened Original Hemp Milk
- 1/3 cup unsweetened applesauce
Yields : 1 8x8 in cake
Total time : 50 minutes

PREP - Preheat oven to 350 degrees F (177 degrees C). Prepare the flax eggs in a small bowl, let thicken for 10+ minutes.
- MIX - In a large bowl, whisk the olive oil, hemp milk, and applesauce. Add the European Gourmet Bakery Apple Cinnamon Muffin Mix and the 2 flax eggs and whisk till blended completely.

BAKE - Pour batter into a greased 8 x 8 in baking pan. Bake for 35 -40 minutes, or till a toothpick comes out clean from the center.
- COOL - Let cool for 10-15 minutes to allow time to firm up.
