Microwave Chocolate Mug Cake
You know those days when all you want is a big slice of cake, a book and a quiet corner to curl up in? Yeah. I have a few of those every couple of months. Trouble is, I don't always have any cake lying around to curb my cravings.
So I usually do the next best thing - whip up a cake in a mug from cake mix that IS always there in my pantry. This mug cake takes literally minutes to make and uses just 3 ingredients. You can't ask for an easier dessert. Really.
I've used Cherrybrook Kitchen's Gluten-free Chocolate Cake Mix that is vegan, peanut free, nut free and soy free to make this not just a lazy person's (read: me) favorite, but also perfect for food allergy folk.
Ingredients
- 6 tablespoons Cherrybrook Kitchen's Gluten-free Chocolate Cake Mix
- 1/2 tablespoon oil
- 2 teaspoons water
Yields : 1 cake in a mug
Total time : 5 minutes
Directions

MIX - Add all ingredients to a microwave safe mug and mix well.

MICROWAVE - Place mug in the microwave and cook for 1 minute at full power.
- COOL - Once done, take mug out of the microwave and allow it to cool for 5 minutes before digging in.
